Christmas Cake 🎄🎄🎄
Christmas is incomplete without this rich, dense and delicious boiled fruit cake ♥️
• Dry Fruit mixture ~
~Take a cup of each dried cranberries, black raisins, golden raisins, 1/2 cup of cherries
~ Heat 1 cup of water on medium heat. Add 2 cups of brown sugar, 4 tbsp of unsalted butter, pinch of salt and a tsp of cinnamon powder.Bring it to a slight boil and add the above dried fruits. On medium heat bring it to a boil and turn of the flame.
~When the mixture is slightly cooled but still lukewarm add in the candied fruits ( I added 1 cup of candied orange and lemon peels) Also add in 1/2 tsp of lemon and orange zest. Also add in 1 cup of chopped nuts ( I added almonds & walnut)
~ Add in 1/2 cup of cherry brandy
~ Let the mixture soak for at least 3 to 4 hours ( you can also soak it over night)
• Wet Ingredients ~
~ When the above mixture is well soaked, add in 2 large egg, 1 tsp of vanilla extract.
• Dry Ingredients ~
~ In a bowl mix 2 cups of all purpose flour with 1 tsp of baking soda and 1 & 1/2 tsp of baking powder.
~Now add the dry ingredients to the wet ingredients and fold it well. Pour the cake batter into the cake tin and bake it at 170C for 40 to 45 mins or until a skewer inserted in the center comes out clean
~Allow it to cool down and brush it with the cherry brandy again. ( I generally make this 2 days ahead and brush it once for two days. Cover it with a cling foil and keep it in a cool place.
